GREAT Thin Crust Pizza!!


If you read my last post with my love for the "Tortilla Land" uncooked flour tortillas from COSTCO, you will know that...yes...we're obsessed...and yes...we like to make PIZZA with them! YUMMM. So, I thought I'd spread the obsession to you all with Jordan's own creation... "recipe..." or rather, "formula" for making GREAT personal tortilla pizzas.

This is what you do:

1. Preheat your oven to 450

2. Place 1 uncooked tortilla on the rack for 1 min, 30 seconds. (of course oven times will vary…mine tends to be fast) It will have puffed up into a giant balloon (maybe you can prick it with a fork first so this doesn’t happen, but don’t prick all the way through, bc the pizza sauce will leak through)

3. Take the puffed up tortilla out of the oven (don't worry, just prick it lightly with a fork and it will deflate!)

4. Then, flip it over so that the crispy side is up. That is the side you’ll put the sauce, cheese, and toppings on.

5. Once you’ve “dressed” the pizza, you put it in the oven again at the same temperature for about 7-12 minutes. Be careful to not over-cheese it. This is a very thin-crust pizza and is delicate. Always put it directly on the rack.

Jordan has perfected this recipe through trial and error, so shortcuts won’t work! Enjoy!

1. I'm obsessed with these tortillas from Costco, they're Tortilla Land uncooked tortillas. They take two seconds to cook and taste just like homemade--or like the ones at Cafe Rio (but no lard :)) Jordan uses them to make a really good thing crust pizza...to die for.
2. Blogging, of course!
3. Decorating my house, and anyone else's house...

1. I washed my car today. It had MUSTARD on the hood of the car! How does THAT happen? Did you know that mustard stains cars TOO?? I can't get it out!! I'll have to maybe take it to a car wash with their special......soap?
2. I LOVE being a gospel doctrine teacher...it is hard work (once every three weeks) but it is SOOO rewarding!
3. I love organizing. At my little 2-day a week job after work at Downeast Home, I can't stop cleaning up stuff and organizing it...If only I were paid to do that at MY house :) Wait, I do it anyway...

Vegas Trip...Again!

But this time, Jordan came! So, I was feeling Sydney and Gavin withdrawls, so I had to go see them in Vegas. Since Jordan will probably have to work some weekend hours for his new job, this was the perfect time. So, he quit his other job in time to go to Vegas on Thursday-Sunday, and start his new job on Monday.

It was the best, of course. Sydney and Gavin are such cuties. "Uncle Jordan" is now Gavin's best friend for sure. Sydney told my mom that "Mon (Jordan's nick name ever since she met him...becuase he's a "monster!") scared her every day!" Actually, she peed her pants like 5 times because she has "accidents" when she is tickled. Thanks to Jordan, that is what happened.. :)

We went to the Las Vegas Towncenter, had some fun looking (but not buying) stuff at H&M. Although, Michelle did find the CUTEST swimsuit for Sydney, and for Sydney's best friend (next door neighbor) Jade.




They had fun dancing around the store, trying on sunglasses and looking cute. Can't wait till they're teenagers, right Michelle? :)

Later, we all went bowling. It was a pathetic night at the bowling alley. We all scored really really low...even Michelle!! Her all-time low! She and Andrew were practicing Jordan's special curve thing he does with the ball, which doesn't always work out even for him (sorry honey...but you know it's true!) He took a bowling class, so he's pretty...fancy...

This one is Jordan sitting on Sydney's lap. He got tired. I think he MIGHT have been a bit too heavy...

But I have to say the best part of the night was Gavin performing his "happy dance." That's all you have to say, "Gavin, do the happy dance!" and he does it. I think he rival's Elaine's (on Seinfeld) moves!!

I have to say this though... Sydney and I had a bit of a falling out one day. I did her hair SOOOO pretty... loose curls, really nice. She HATED it and said it was "really UGLY." She's crazy. Anyway, I can't believe I was so offended...it was weird. I'm just posting this today so that in a few years when Sydney is DYING to have her hair curled, I can show her this post. She hated it so much that she started pouting, saying that it was ugly, and then got a hold of the spray bottle and wet her hair down. Then she proceeded to straighten it out. I have to say, it looked really not cute, but then she blowdryed it (HERSELF!) and it looked "OK." Not as good as when I DID IT though!!

Oh well, I still love her. Michelle, Andrew, we love you too!! Thanks for letting us come! Every time we come we feel like moving there so that we can hang out with you guys all the time... if only...

Jordan's New Job

So, my super talented and smart husband got a new job that pays way more! YAY! It's at ICU Medical, a company that produces (and has a patent on) needleless syringes that are used for IVs. Anyway, he is now some kind of "engineer technician" or something... but in layman's terms, he fixes the machines that make these syringes, and also does some preventative work so that they don't break down. Our good friends, the DenBestes, that live in our neighborhood, got him the interview because Jonathan DenBeste works there. Now, they work together, so that's good! Also, it's RIGHT across the street from school, so Jordan can take classes really easily, and the job also has a lot of downtime (when the machines are running perfectly...) when he can study.

Yesterday, he called me and said, "this is my ideal job... machines break, and you have to figure out how to fix them!!" He is the world's best "tinkerer" if that's a word... Tinkering with machines is totally his cup of tea.
